Yeast, we can: optimized expression of high-value proteins thanks to fermentation
About the Session
Yeasts are microorganisms that have played a fundamental role in the kitchen for millennia: let's just think on the fermentation of bread, the production of wine, cheese, milk… But in the last decades, thanks to the development of Recombinant Protein Production technology that has taken place in the biopharma industry, it has been possible to develop what, in the context of the AgriFoodTech industry, we all know as Precision Fermentation: the science where "bio" and "food" melt together.
Thanks to this combined technology, in Levprot Bioscience, our 19-people team has been able to design and optimized specific yeast cells, all of them able to constant and robustly produce high-value proteins at costs finally affordable for the food industry. And, what is more important, with identical functional and structural properties of the proteins that come directly from the original animal, guaranteeing the organoleptic properties of the final food product.
Yeasts are our favorite organism due to three main reasons: because they are superior organisms (capable of producing proteins from other superior organisms), because they grow a lot and very fast, and because their handling and growth costs are much lower than those of other expression systems. Thanks to this, we can transform residual raw materials from other food companies into the perfect medium to produce, thanks to our proprietary expression tools in various strains, high-value proteins at cost-parity.
Examples of this are our projects for the production of Brazzein, a plant protein with a sweetening power 1600 times higher than sugar, that we are able to produce in an scalable way, and Bovine Serum Albumin, suitable for food production, but animal-free.
In addition, the robustness of our expression system has allowed us to also develop a complete portfolio of highly active enzymes, suitable for the food and the biotech industries. From strain development until fermentation optimization in our 50 L pilot plant, our technology is able to complement the needs of many of the other players in the plant-based and biopharma landscape, always tuned with our "Yeast, we can!"
