Ignacio Vargas

Ignacio leads Dairy and Alternative Dairy Innovation for Europe at Givaudan, where he collaborates with customers and partners to develop game-changing innovations in food and beverages in the region. Prior to his current role, he was Head of Product at precision fermentation and cultivated milk start-up TurtleTree, where he built the product and business strategy for the company, while at the same time contributing with the Good Food Institute APAC as a Research Fellow. Having worked in three different regions (Europe, Asia and Americas) for B2Cs, B2B and start-ups, gives him a unique perspective of the challenges and opportunities companies face around the world in terms of innovation, especially on alternative proteins. Ignacio brings over 15 years of experience in the Food & Beverage industry having worked with leading companies such as Nestlé and Mead Johnson. He holds a Master in Food Innovation and Product Design from AgroParisTech (France). As well in academia, he has held a lecturer position at the Biotechnology and Chemical Engineering Department at ITESM, Mexico
